It's been an interesting week to say the least, we clean up the rest of the veggies, the garden is completely black now and then I also had an. unfortunate accident.

Stewed Tomatoes:
grind tomatoes with largest holes.
1 tbsp sugar
1 tbsp pickling salt
boil jars for ½ hour.

Tomato soup:
15 gallons tomato juice
13 cups chopped onions
18 cups chopped celery
6 cups chopped beets
9 cups sugar
3 cups salt
4 lbs margarine
18 cups flour

Cut up tomatoes, cook approx ½ hour, then juice. Measure juice into kettle. Chop onions, celery, and beets with cube attachment, measure and cook. Blend them until they are smooth. Combine margarine, flour, salt and sugar with enough cooled juice to mix well, and then add to juice and blended vegetables in kettle. Boil for 20 minutes. Fill jars and put in tank until it reaches 216° point. Large recipe yields approx 80 jars.
NOTE: when making Gluten Free we swap the flour with starch.

Salsa:
30 cups tomato paste
10 gallons tomatoes (measure when drained)
2.5 gals red peppers
2.5 gals green peppers
2.5 gals onions
80 cloves garlic (add to taste)
8 cups celery
chop veggies, add to skillet with
30 cups vinegar
5 cups sugar
2 1/2 cups pickling salt
3/4 cup paprika
6 1/2 tbsp oregano
cook for 1 hour, pour into jars and allow to seal.
