Took vegetables from my garden and made lots of tasty food for lunch/ghee rice/Fried brinjal curry

Assalamu alaikum and Hi friends!!welcome to my kitchen by Fasa...hope you all are doing good?today also came with an interesting vlog friends!!there are many brinjal(egg plant)plants in my garden and they are bearing lots of brinjals now so thought to make a new recipe called"fried brinjal curry"in my way.....this is a special type of brinjal curry which is making for our family occasions....this curry is a fried version and specially we have to fry the whole brinjal....and as well as we have to make a tasty gravy separately for pouring above the fried brinjal when we are serving......

This fried brinjal curry looks awesome as well as tastes excellent....I thought to share some garden tips too in this video specially because of my some of subscribers's requests...you may plant these types of brinjal with less maintenance but you have to fertilize them once in fifteen days using any kind of organic composts and also you have to sprinkle with any kind of organic pesticides once in 5 days...also green chilies are very very expensive in Srilanka now a days but alhamdhulillah thank god I have plant many green chili,capcicum and bird's eye chili plants...and also they are bearing fruits now....

So if you have some place to grow plants even it may be on the grow bags,try to grow some essential vegetables.....and also today made a simple chicken curry and also already posted the recipe on youtube so link is below....papads are very famous among Srilankan people specially among Srilankan village people...if there are any special occasions,papads take the main part in food verities....so fried some home made papads using cassava or manyokka....that recipe is also below....

So if there is a special at home,we used to make coconut milk rice or ghee rice for the lunch...so I thought to make some ghee rice using basmathi rice...there is home made "keeri samba"at home but my family members like to eat basmathi more than keeri samba...may be because we eat keeri samba etc often...lolz today I made the rice in a different way like "biriyani"
I do not know how many people make these types of rice like in my way...but keeping "dum"method will be so tasty and fragrance more than cooking normally....

Ingredients:

FOR MAKING FRIED BRINJAL CURRY:
*Brinjal-700g[mix with turmeric and salt]
*Oil for frying

Making Gravy
*Oil-half TBsp
*Mustard and fenugreek seeds
*Onion-half
*Green chili
*Maldive fish-1 TBsp
*Curry leaves and pandan leaf
*Tomato-1 small[optional]
*Ginger garlic paste-1tea sp
*Turmeric-half tea sp
*Salt
*Cumin powder-half tea sp
*Curry powder-half tea sp
*Chili powder-Quarter tea sp
*Pepper powder-half tea sp
*Home made seasoning cube-a small piece
*1st extract coconut milk-three quarter cup
*2n extract coconut milk-1 cup
*Lime juice as your taste

FOR MAKING GHEE RICE
*Basmathi rice-3 cups
*Ghee-3.5 TBsp
*Oil-Three quarter TBsp
*Hot water-5 cups or according to your rice
*Onion-1[small]
*Cinnamon stick-3 inches
*Cardamom-4 pods
*Cloves-4 pods
*Star anise-1
*Cinnamon leaf
*Curry leaves and pandan leaf
*Ginger garlic paste-three quarter TB sp
*Salt
*Some ghee after taking the rice from the flame
